- 1 pound celery, chopped
- 1/2 cup frozen peas
- Salt and pepper to taste
Instructions
- Preheat oven to 375 degrees F (190 degrees C).
- In a large Dutch oven or pot, brown the beef in the olive oil over medium heat. Remove the beef from the pot and set aside.
- Add the onion, carrots, celery, and garlic to the pot and cook until softened, about 5 minutes.
- Stir in the tomato paste and cook for 1 minute.
- Add the red wine, if using, and cook until reduced by half, about 5 minutes.
- Add the beef broth, oregano, thyme, and bay leaf to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add the potatoes, carrots, celery, and peas to the pot. Season with salt and pepper to taste. Bring to a boil, then reduce heat and simmer until the vegetables are tender, about 20 minutes.
- Serve immediately.

- You can use any type of meat you like in this stew. Beef, pork, lamb, or venison are all good options.
- If you don't have red wine, you can use white wine or even water.
